“There is a surprising amount of oak showing through on this barrel at first blush. This is followed by a pleasant bouquet of cherry, sweet cream, honey-roasted peanuts, almond brittle and shortbread cookies. The palate leans into caramel, cherry preserves, sweet cornbread and more roasted peanut character. On subsequent sips, more floral essence comes up with rosemary and honey before moving into sarsaparilla, toffee, hazelnuts, nutmeg, almond butter and a big oak undertone. The finish brings in more of the nutty character with roasted peanuts, pecan pie, chocolate-covered almonds and chestnuts, alongside vanilla syrup, candied pear, root beer barrels and hints of medium roast coffee on the back end. This selection ultimately highlights the dynamisms that can occur within bourbon, with a progression that delivers new and keen flavors throughout a glass.
